Abstract

Fruit juices have occupied an important position in the modern diets of people belonging to different communities and classes world over. Fruit juices contain nutrients like vitamins, minerals, trace elements, energy and phytochemical including flavonoids, polyphenols and antioxidants that have been shown to have varied health benefits.
Studies have shown that phytochemical present in fruit juices inhibit chronic inflammatory diseases such as Alzheimers disease, insulin resistance, diabetes, cardiovasculo diseases, osteoporosis, arthntis, cognitive functions and brain diseases and some forms of cancer.
Botanical antioxidants have received much attention as they can be consumed for longer periods of time without any adverse effects.
Thus, the aim of the present study is to develop beverages of natural fruit juices with added medicinal plant such as rosemary extract which is known to be a valuable source of natural antioxidants. These fruit-orange rosemary juices are going to be analyzed for physicochemical properties, bioactive phenolics, flavonoids, anthocyanins, vitamin C and minerals. Antioxidant activity of all tested juices and their controls were also assessed. All accepted juices and their controls are identified for their phenolic, and flavonoid contents using HPLC.
Sensory evaluation was performed initially for choosing the most acceptable fruit-orange rosemary mix.
