Abstract

This study was aimed to evaluate the effect of Jerusalem artichoke flour and barley flour on diabetic rats by produce pan bread by portent replacement for wheat flour with JAF and BF with different percentage as 5, 10, 15% JAF and 10, 20, 30% BF from wheat flour.The experiment was carried out a five groups of rats. induced diabetes by Injection with STZ 40mg\kg body weight. Some biochemical parameters statuses as well as histopathological changes in diabetic rats fed on pan bread replacement wheat flour with JAF and BF were studied. The result indicated that the used of JAF and BF or both replaced in different concentrations caused significant decrease glucose level and improvement in food intake and body weight gain as well as there was a positive effect of total cholesterol tri-glyceride, HDL, LDL, improvement in liver function and kidney function .the beneficial effect were more when the used nutrientgiven in the higher dose concentration .Histopathology study indicated that the used experimental diet has an improvement in examined organs such as liver, kidney, pancreas
