Abstract

Chemical and physical composition of the red and yellow plum was estimated.The different products of plum fruits are performed included dried, jam and nectar.Antioxidant capacity, total phenolic compounds, total flavonoids, total carotenoids, total anthcyanins contents were evaluated after different processes and during storage of selected fresh fruits and their products.The sensitive tested were estimated on the products of red and yellow plum (the dried , the jam , and the nectar) during the manufacturing time (zero time) and after 9 months of storage and it includes (texture, odor, color, taste,and overall acceptability).This study was carried out to evaluate the effect of plum products [5% and added to the rat diets] on scavenging the toxicity, improve the blood function, increasing of the bone density.The biological evaluation was studied on tested rats fed with diets containing 5% plum products were added to basal diet all around the experimental period 40 days. The tested rats were classified and labelled in 10 groups. All groups, except control group were treated with 1/20 LD50 deltamethrin (245mg/1000g of body weight) in corn oil. After 40 days small amounts of blood are extracted as well as the functions of liver and kidney are measured as well as the total cholesterol, HDL, LDL, the total lipids, the total protein, glucose, hemoglobin, total antioxidant capacity.The bone of femur and tibia are collected and the osteoporosis tests are measured
