Abstract

A total of 80 random samples of fresh rabbit meat cuts representing shoulder, loin, ribs, and thigh regions (20 of each) were obtained from different rabbit markets in Zagazig City during 2022. The present study was conducted to evaluate the microbiological status of rabbit carcasses marketed in Zagazig City, Sharkia province, Egypt. The present investigation was designed as follows: Organoleptic evaluation of overall acceptability of different rabbit meat cuts and microbiological assessment of rabbit meat samples including aerobic plate count (APC), Enterobacteriaceae count, total yeast and mould count, E.coli and its serotypes, Salmonellae and its serotype, total Staphylococcus count (TSC), detection of staphylococci and its serotypes and antimicrobial susceptibility of S. aureus.
The results showed that the highest mean score for overall acceptability of rabbit meat cuts was observed in thigh samples (7.01) followed by shoulder (6.92), then 6.91 and 6.90 in ribs and loins, respectively. The obtained results revealed that APC had a mean value of 1.1x106 cfu/g in shoulder, 9.6x105 cfu/g in ribs, 1.0x106 cfu/g in loin and 1.2x106 cfu/g in thigh samples. The results reported that Enterobacteriaceae count had a mean value of 4.7x104 cfu/g in shoulder, 5.7x104 cfu/g in ribs, 5.1x104 cfu/g in loin and 6.0x104 cfu/g in thigh. However, the obtained results showed that total yeast and mould count revealed mean values of 9.7x104, 8.2x104, 9.5x104 and 9.8x104 in shoulder, ribs, loin and thigh samples, respectively.
