Abstract In this work, were divided into 6 groups; group (1) consisted of 15 rats that were fed the usual diet (control group). Group (2) were orally given vitamin. Group (3) were orally given dimethylnitrosamine. Group (4) were given the same doses of dimethylnitrosamine and vitamin C. Group (5) were given sodium nitrite . Group (6) were orally given sodium nitrite and vitamin C . The liver, kidney and stomach were dissected out rapidly and examined to study the effect of such compounds. The results confirmed the toxic and carcinogenic effect of nitrosamine on the liver while only the toxic effect could be detected in the kidney. On the other hand , no effect could be detected in the stomach. This study also confirmed the protective effect of vitamin C against such compounds. So, It is advisable to:1?Avoid exposure to the different sources of nitrosamine as they are highly carcinogenic. 2?Avoid, as much as possible, the intake of preserved food that contain nitrite. 3?Supplement with vegetables and fruits rich in vitamin C to the diet in order to avoid the dangerous toxic effect of nitrite and nitrosamine in particular for the population exposed to such compounds. |
