Abstract

Mean levels of nitrate and nitrite in raw milk were 206.46 and 1.099mg/kg(ppm) respectively. All examined raw milk samples had nitrate level exceeding the Acceptable permissible limits. Only 20% of examined raw milk samples exceeded the Acceptable permissible limits of nitrite. The calculated daily intake of nitrate and nitrite equal to 41.3and 0.22mg respectively .Mean concentration of nitrate and nitrite in cream were 146.16and 27.53 ppm (mg/kg) respectively, while the mean concentrations of nitrate and nitrite in Ras cheese were Zero and 0.015 ppm, respectively. 50% of cream samples contained nitrate in level exceeding the APLs and 100% of cream samples had nitrite level exceeded the APLs. Nitrate was not detected in Ras cheese at all and all Ras cheese samples contained nitrite within the APLs. The calculated daily intake of nitrate and nitrite were 14.6 and 2.75mg respectively. In Ras cheese, the calculated daily intake of nitrate and nitrite were zero and 0.0012mg daily Mean level of lead and cadmium in milk were 0.037 and 0.02 ppm respectively. About 30% of examined raw milk samples had lead concentrations exceeds the APLs but all examined raw milk samples had cadmium level within the APLs. The calculated daily intake of lead and cadmium were 7.4 and 4 ug Mean levels of lead and cadmium residues in examined cream samples were 0.0419 and 0.047mg/kg (ppm). 43.3% of cream samples contained lead exceeded the APLs and about 33.3% of cream samples had cadmium level above the APLs. The calculated daily intake of lead and cadmium were 4.19 and 4.7ug respectively.The mean levels of lead and cadmium in Ras cheese were 0.0334 and 0.037 ppm respectively. About 16.7% of examined cheese samples contained lead in a level exceeded the APLs while 23.3% of examined samples exceeded the APLs of cadmium. The calculated daily intake of lead and cadmium were 2.67 and 2.9 ug.
