Abstract

Children in developing counties are suffering from malnutrition as a result of poverty, lack of suitable food, incorrect knowledge in nutrition and superstition. It is during the rapidly growing period of infancy and early childhood that malnutrition is most marked resulting in a high morbidity and mortality and probably leaving physical and psychological sears in later life in those who survive. So, this study was designed to prepare canned meals with high values of protein, vitamins special provitamin A (carotenoids) and minerals, while it was easy for preparing even to ignored women. We have chosen some vegetables as baby foods for weaning babies (carrot, pumpkin and sweet potato) and biscuits, orange juice and pure ascorbic acid, which were add to the formulated meals. Prepared canned baby foods were chemically, microbiologically and organoleptically analyzed directly after production and after storage for six months at room temperature. Therefore, the aim of this study was to prepare suitable nutritional canned foods depending on the available vegetables rich in carotenoids. This aim achieve via study: 1.Select some local vegetables (carrot, pumpkin and sweet potato) cheap and high in nutrients 2.Formulation canned baby foods from carrot, pumpkin and sweet potato. 3.Formulation blends of carrot, pumpkin and sweet potato with different ratio. 4-Formulation blends of the previous blend adding biscuits. 5.Comparison the prepared blends with compared baby food (Gerber). 6.Chemical composition, microbial analysis and organoleptic evaluation of these blends. from the obtained results it could be concluded that: - The raw materials of this blends is very easy to obtain from local market. We can advice mothers to prepare it for feeding her infants from (6 – 12) beside breast feeding to prevent childhood diseases like caloric deficiency, diarrhea, night blindness, scurvy, anemia. These blends were prepared without any addition of preservatives colorants or flavors. The benefits of these blends had no effect about infant health especial infant who had a vulnerable li vulnerable of lactose or fauvism). It is very important to support these blends with any source of animal protein like (milk, dry milk, meat) or mushroom and Soya bean, that it because increasing the value content of minerals especial calcium content and also increasing the content of protein value and its quality .
