Abstract A total of one hundred and twenty random sample of processed cheese (70) and dried milk (50) were collected from different localities in Dakahlia governorate for mycological examination, determination of mould count, isolation and identification of moulds, evaluation of ADM medium and screening of aflatoxin producing Aspergillus flavus strains. Sabourand dextrose agar was used as general isolating medium, while Czapek yeast agr and malt extract were used in identification, and ADM for isolation and diagnosis of A. flavus. The results show that 95.7% of processed cheese samples and 78% of dried milk sample, were contaminated with moulds. Aspergillus, Pencillium, Fusarium, Cladosporium, Alternaria, Paecilomyces and Mucor. Species were isolated from different samples and Aspergillus species were further identified into A.niger, A.flavus, A.candidus, A.ochraceus, A.wentii, A.versicolour, A.terres, A.pencilloid and A.fumigatus. while, Penicillium spp. Were identified into P.verrucosum, P.expansum, P.roqueforiti, P.camemberti and P.chrysognum. Moreover 27.27% of isolated A.flavus strains were found to be aflatoxin producer. The ADM medium was evaluated to be sufficient and specific in diagnosis and isolation of A.flavus from food samples. The public health and economic importance of moulds and aflatoxins as well as recommendations for preventing and / or minimizing the contamination of dairy products with mould were discussed. |
