Abstract

Mulberry trees belong to genus Morus of the family moraceae. The present study conducted to study the chemical composition of mulberry plant( leaves, black and white fruits ) through the determination of crude protein, ash, crude fiber, crude lipid, total carbohydrate, soluble sugars and some elements.
Also total polyphenols, total flavonoids, total anthocyanins and ascorbic acid were determined. The effects of three samples methanolic extract as natural antioxidant, reducing power, antifungal and antidiabetic were also studied.
The obtained results could be summarized as follows :
1.Determination of crude protein, crude lipid, ash, crude fiber, total carbohy- drates and total soluble sugars.
2.Determination the elements analysis revealed that mulberry plants .
3.Determination of total polyphenols and total flavonoids.
4.Determination of total anthocyanins in fruits .
5.HPLC analysis proved that all three samples contained pyrogallic, gallic, protocatecheuic, catechin, P-coumaric, O-coumaric, salysilic and cinnamic with different concentrations.
6.Phytochemical tests of the methanolic extracts of the three samples.
7.Antifungal activity of all mulberry methanolic extracts showed that the percentage value of growth inhibition increased with increasing the concentration of the extract. The highest growth inhibition (73.33%)was obtained for mulberry leaves extract against g Botrytis fabae.
8.Antidiabetic effect of mulberry plant on diabetic albino rats .
