Abstract

It was noted that over one million of the Egyptian children, from 6 months to 6 years of age ,were stunt in growth because of chronic under nutrition . Malnutrition may be due to protein energy deficiency mineral deficiency or vitamin deficiency . Protein energy deficiency is the most serious public health problem in the developing countries .
Inadequate intake of micronutrients such as iron , calcium or vitamin A leads to many nutritive problems especially for preschool children (2-6 years) such as anemia in case of deficiency of iron .Calcium deficiency shows negatively affect proper bone and teeth development as well as influences the proper function of central nervous system. Inadequate intake of vitamin A show the risk to vitamin A deficiency.
So, there is an urgent need to develop baby foods that would be high nutritive, suitable, convenient and economic.
In this investigation, 37 mixtures samples were devolved on the basses of mixing wheat flour 72% extraction, defatted soybean flour, chickpeas flour, lentil flour, blanched carrots and skim milk powder with different percentages .
The chemical analysis was done for all the raw materials.
The devolved biscuits were analyzed for its chemical components such as moisture, protein, fat, fiber, ash(carbohydrate by difference), iron, calcium and vitamin A.
The organoleptic properties of 37 biscuit samples were carried out.
The protein energy deficiency is the most serious public health problem .Therefore, the best 9 biscuit samples were chosen according to its protein content and their organoleptic acceptability.
