Abstract

♦ Introduction: - Anisakis simplex is a common parasite of marine fish and mammals In Egypt. Infective-stage larvae found within the flesh of sea fish or cephalopods can be ingested by humans accidentally when raw or undercooked fish contaminated causing anisakidosis as a zoonotic disease. Human anisakis infections frequently cause gastrointestinal symptoms, which may be associated with mild to severe immunological, usually allergic-type, reactions. In addition, some patients show more-generalized hypersensitivity reactions, without any associated digestive disorders. ♦ Aim of Work: - 1. To discuss the Pathogenecity of Anisakis simplex. 2. Methods used in order to reach a specific diagnosis. ♦ Conclusion: - It is becoming apparent that Anisakis simplex is the most important hidden food allergen in the adult population. A positive diagnosis of Anisakis simplex hypersensitivity is usually considered if a patient has a compatible clinical history and positive skin prick test and/or a positive specific anti-Anisakis IgE value. The use of [i] temperatures of 60°C for at least 1 min when cooking fish conventionally or smoking fish, [ii] heating to ≥ 74°C for at least 15 seconds when microwave cooking , and [iii] freezing at temperatures lower than –20°C for at least 24 h has been recommended to kill the parasites and prevent live infections.
