Abstract

The present study aimed to answer two questions the first one is that if these various meat products consumed here in El-Mansoura city namely minced meat, burger, luncheon and frankfurter were in compatible with the Egyptian Organization for Standardization or not? The second one also to ensure that if these collected meat products were exposed high sanitary and safety conditions or not? Mansoura city was divided into three different sites. from each site three main registered marks of meat products were chosen. Five packages of burger, minced meat, luncheon and frankfurter were collected where were represented each chosen product mark. Chemical and microbial analysis were determined on all samples and could be concluded the following results: All collected minced meat samples were chemically in accordance with (EOS,2005a) and scored stable against protein deterioration and fat rancidity, but only M2 sample was safe from microbiological view. In regard to (EOS, 2005b), beef burger samples were in compatible with its standards. B2 the nearest one to protein and fat deterioration. Collected burger samples from Mansoura city were not in agreement with (EOS, 2005 b) from microbiological view. All frankfurter samples were in compatible with (EOS, 2005c). They were in good case without protein deterioration while, F2 sample had fat deterioration and no rancidity occurred. F1 had exceeded the permissible limits of (EOS, 2005 c) for the microbiological examinations. All luncheon samples were chemically in accordance with (EOS, 2005d). But all samples exceeded the permissible limits for the microbiological examinations. The study could be concluded that: • M2 sample was safe on human health from the minced meat samples. • All burger samples were unsafe on human health from the microbial point of view. • Frankfurter F1 sample was unsafe on human health. • All luncheon samples were unsafe on human health.
