Abstract

Patients with diabetes and obesity and their well known relation with high risk cardiovascular problems had provided the stimulus in the search for and alternative sweetening agent helping them in living a healthy life without suffering of many diet restrictions, these agents were known as ”Artificial Sweeteners”.
Aspartame a widely used artificial sweetener which contains two amino acids aspartic acid and phenyl alanine (Lean and Hanky, 2004). Aspartame is metabolized in the body to its components aspartic acid, phenylalanine and methanol (Charles, 2003).
Aspartame and its major endogenous metabolite L-Aspartic acid are shown to act directly on the NMDA-sensitive glutamate recognition sites in the brain synaptic membrane (Pan-Hou et al., 1990).
