Abstract There is a clear shortage in the suitable weaning foods whi processed in Egypt, therefore, preparation of infants formulae of hi nutritional value, from locally available raw materials are ye important. Seven blends were prepared from 15 raw materials in differer ratios, faba bean, soy, yellow lentils fenugreek seeds and barly, nec potatoes yellow carrots, peanut seeds, skim mit powder, sugar medicinal, ‘anise, caraway fennel and peppermint leaves. Many pre-treatment processes were carried out to minimize thc anti-nutritional factors, were included: (1) Soaking of(faba seeds, lentil, barly, and fenugreek). (2) Germinating of(faba seeds, barly and fenugreek). (3) Par-cooking of (lentil rice and potatoes). (4) Roasting of (peanut). Moreover, all mentioned ingredients were milled and sieved. Biological studies including protein efficiency ratio (T&E.R.) net protein ratio NPR) and digestibility co-efficient (D.C.) were determined for the prepared seven blends. P.E.R. values ranged from 1.47 to 1.68, the highest value were noticed in rats fed blend No. 1 (1.68) followed by the both blend No. 4 and 5 (1.60). Concerning N.P.R. values it ranged from 2.40 to 2.67, blends No. 1 and No. 5 achieved 2.67, and 2.66 respectively. Comparing with the control diet (casein) which was 2.97. |
