Abstract The present study was conducted for the following points :- 1.To make survey of some plants which have a high concentration of fructose for obtaining glucose isomerase. 2.To study the tactors atl’ecting the production of glucose isomerase from the plant namely species, tissue and m_urity stage of edible parts. 3. To investigate the properties and the factors affecting the activity of enzyme prepared from different plant sources.4. To find out the suitable· conditions for producing enzyme of high activity and quantity.5. To utilize the prepared glucose isoqlerase extraction in production of fructose from the commercial glucos. |
