Abstract 111 recent years, much research efforts has been directed toward iniproviug the production of inulinases that produced by microorganisms. Microbial inulinase offers an interesting perspectives in the point of production view of the so-called ”Ultra high fructoseglucose syrups”, that can’t be produced from starch, but from inulin. The i~nportance of fructose in human nutrition has been increased significantly and acquired a place in the market. The sweetness and functionality of fructose syrup were considered satisfactory for complete or partial replacement of liquid sugar in many applications. |
