Abstract It is well known that all pesticides used to control the nuisible pests and to increase the production of different cult~u-e(s hits ,vegetables and normal cu1ture)have an adverse effects on the environmental pollution and on the public health.111 recent years,both legislators and consii~ners in Egypt showed a great interest towards the safety of food products from different contaminants.So this study was directed to find a simple analytical inetl~od to determine certain pesticide residues {carba~nate insecticides (carbofuran ,car-bosulfan, 1netl~o1nyl);orgai10~11ios~~1io1-i~s insecticides (malathion,silycron) ;pyrethroid insecticide (cypermethrin) and the organochlorine insecticide (dicofol)) in potatoes tubers and tomatoes hits whch represent two of the no st important diets in Egypt.Deep concern was focused on the effect of food processing on these pesticide residues.However,data revcaled that food processing eleminate and reduce elirninat pesticide-residues in food materials .Moreover,this study was directed to study the relation between these pesticide residues and their effects on some enzyme activities,s~~cahs Acetylcholine esterase(AchE), transaminases (AST & ALT), pl~ospl~stases(AI<&P ACP) and total protein in treated white rats which might reflect some indications on residual hazard that affect the human health. |
