Abstract An increase in the level of concern in recent years suggests that consumers are more receptive to educational information . However, changing lifestyles have lessened the awareness of food borne illness, especially among younger consumers . Failure to fully recognize the symptoms or sources of food borne disease prevents consumers from taking corrective action. Consumer education messages should include the ubiquity of microorganisms , a comprehensive description of food borne illnesses, and prevention strategies. (3) This work aimed to assess the consumer knowledge regarding hazards and food handling practices in Mansoura city. To fulfill this objective , cluster sampling technique was used. To select the required number of sample (740). A house to house method was adopted till the required number was completed. House hold subjects above 15 years from both sexes -regardless the level of education or the type of job in Mansoura city- were included in this study .Data was collected through interview questionnaire which was consisting of 7 parts , including personal data, level of knowledge regarding source of food contamination , microbial transmission by food , avoidance of bad habits , food handling , tools and instruments, kitchen design and waste disposal and insect control. The results of the present study revealed that : 1- More than half of the sampled consumers (58.9 |
