Abstract

A total of ISOsamples (SOsamples from flank, SOsamples from fore limb and SOsamples from hind limb) were examined for -1-Total plate count - 2-Total Coliform count - 3- Total S.aurues count - 4-Isolation and identification of salmonella species and determine its prevalence - 5- Isolation and identification ofE.Coli O157 and determine its prevalence Total plate count used as indicator of sanitary condition and shelf life of meat. So the result was shown that Total plate count in fore limb was range from 2x103 -6.1xl05 cfu/gm with mean log 5.7 Total plate count in flank was range from 4.2xl03 -2xl07cfu/gm with mean log 7.3 Total plate count in hind limb was range froml.SxlO3 -5.4xl04cfu/gm with mean log 4.7 The result indicate that the heavily contaminated area was flank region as a result of the presence of viscera Total Coliform count used as indicator for fecal contamination and sewage-pollution of water. From the result Coliform count was Total Coliform count in fore limb was range from 10 -7.3x103cfu/gm with mean log 3.86 Total Coliform count in flank was range from 10 -1 .IxlO5cfu/gm with mean log 5.04 Total Coliform count in hind limb was range fromlOx -6.1xl02cfu/gm with mean log 2.78 The result indicate that the heavily contaminated area was flank region as a result of the presence of viscera S.aureus is important organism in food poisoning because S. aureus secret toxin. So its enumeration is important. The result show that Total count in fore limb was range from 10 -IxlO3cfu/gm with mean log 2.85 Total count in flank was range from 10-30cfu/gm with mean log 1.85 Total count in hind limb was range from 10 -2xl02cfu/gm with mean log 1.97. Salmonella species is one of the most important causes of food poisoning.
