Abstract

This study is carried out to compare the action of calf rennet, bovine pepsin, mmp, mpp, epp on milks and caseins of buffalo, cow, goat and sheep milk. Effect of milk clotting enzymes on coagulation time of milk from different mammals is studied. Action of some milk clotting enzymes on casein of buffalo, cow, goat and sheep milk, is investiGated. Some factors affecting coagulation of milk from different mammals with milk clotting enzymes, are investigated. Rate of casein hydrolysis by different enzymes and electrophoretic pattern of residual casein hydrolysis by different enzymes and electRophoretic pattern of residual casein are determined. Besides the specific importance of milk coagulating enzymes, knowledge obtained in the present study would help in cheese processing and ripening .
