Abstract
The Aim Of This Thesis Is To Study The Following: Inactuiation Kinetics Of Peroxidase From Some Vegetables And Fruits , Heat Resistance Parametess Of Peroxidase From Some Vegetables And Fruits. It Also Aims At The Investigation Of The Effect Of Ph , Sodium Chloride And Sucrose Oil Inactivation And Reactivation Of Peroxidase Activity And The Effect Of Storage Periods On Peroxidase Activity From Forgen Vegetables And Jruits. Results Obtaine And Discussion Are Elucidated.
