Abstract This investigation aims to shed some light on the available hard cheese coatings using ras cheese as it is considered the national hard cheese type in Egypt. The present work is covered in two parts: in the first part a preliminary study is carried out to select suitable waxing blends and ample temperature for using them and the second part includes a study of the quality of ras cheese as affected by used coatings. |
