Abstract 50 Samples of ice-cream from Assiut, Standard bacter-iological methods were used in isolation and typing of shigella organisms. In this study no shigella organisms could be detec-ted from the samples of raw or pasteurized milk.while two isolates only from 100 samples of kariesh cheese and only one from 50 samples of ice-cream these finding constitute aserious public hazard since the kari-ash cheese considered in our country the main protein sup-iement to farmers and average class popultion and also ice-cream constitute a hazard since the organisms has long survival time in it. |
