Abstract This investigation was carried out with the objective to study the role of indigenous milk protein. Therefore, a comparison was made between different types of milk, mainly cow, buffalo, goat and sheep milk, in the presence of preservatives (Sodium Azide) to inhibit bacterial growth and activity. As controlling of proteolysis in milk is very important to maintain the quality of milk and subsequent milk products. Factors which may affect proteolysis were also studied. |
