Abstract This study was carried out to investigate the suitability of some edible oils, not commonly used in Egypt, for human consumption in comparison with the local edible oil used in Egypt, thus canola seed oil and rice bran oil were studied in the course of this investigation. The obtained results could be summarizes as follows: l-Effect of different heat treatments on gross chemical composition and ..lipase activity of canola seeds and rice bran - The moisture content of canola significantly (p:s 0.05) gradually decreased as the dry heat treatments, in contrast, significantly gradually increased as the steam treatments. The Moisture content of untreated canola seed was 5.29% this value decreased to 4.717 and 4.422% in samples treated by dry heat for 10 and 20 min., respectively. In contrast, moisture content of canola seeds treated by steaming for 10 and 20 min. increased to 6.271 and 7.542% respectively. The same result was found in rice bran. |
