Abstract

Health disorders in the skeleton and spine occur result of inflammation that affects the joints, due to not following a proper diet. These manifestation can also be reduced by using fortifying foods such as foods rich in antioxidants, minerals and vitamins as defense factors, as fruits are a rich source of vitamins and minerals. It has been proven that tangerines and apricots have a powerful antioxidant effect. The objective of this research was to study the effect of iced fruit smoothies enriched with fruits (Tangerine juice or apricot juice), turmeric and bee pollen on Monosodium Iodoacetate-Induced arthritis. Six samples of iced fruit were prepared as follows ; (Iced Tangerine, Iced Tangerine with turmeric, Iced Tangerine with turmeric and bee pollen, Iced Apricot, Iced Apricot with turmeric and Iced Apricot with turmeric and bee pollen) Next to three other samples which are bee pollen with olive oil, bee pollen with bee honey and bee pollen with bee honey and turmeric. Chemical composition was evaluated , Levels of serum calcium, vitamin D, ROS, MID, antioxidant enzymes and joint image analysis were assessed, Methods : Iced fruit was prepared by adding of fresh juice fruits (tangerine or apricot) at 70 % ; iced fruit with turmeric (1.5 % turmeric) ; iced fruit with turmeric and bee pollen (1.5 % turmeric and7% bee pollen). All mixtures were chemically and sensory evaluated. Joints arthritis was induced by injection of Monosodium Iodoacetate (1 ml is injected into each knee). Results revealed that the tangerine and apricot ice cream enriched with turmeric and bee pollen had the highest levels of protein, fat and ash compared to the rest of the treatments. The results also showed that all bee pollen treatments reduced serum ROS and MDA, while iced apricot treatment were more effective than iced tangerine for ROS and MDA reducing. All bee pollen treatments elevated levels of antioxidant enzymes (GSH, SOD and Catalase), however the most effective treatments was Bee pollen with Bee honey and turmeric, followed by iced apricot with turmeric and bee pollen. In Conclusion, the combination of iced fruit, turmeric and bee pollen yielded an acceptable sensory product and demonstrated protective actions for MIA-induced arthritis in rats. The study recommends : turmeric and bee pollen in the mentioned proportions, to increase the nutritional value and functional properties of food products, and prevent arthritis.
